Is the cheese suitable for postage?
|
Yes, we produce a hard, resistant cheese, with a long life. The packaging is such that the cheese is secure. Quivvy is a soft cheese that comes in a jar and is preserved in oil; therefore it too has a long life. Our delivery comes with a guarantee: If damaged while being delivered, the cheese will be replaced. |

Are the cheeses suitable for vegetarians?
|
Yes, vegetarian rennet is used to make the cheese, as opposed to animal produced rennet. Also the rennet we use at Corleggy is NOT genetically modified. |

Are the cheeses made from pasteurised milk?
|
Corleggy Goats Cheese is made from pasteurised milk, while the Drumlin range, from Cows milk, is made from raw milk. |

Is any of the cheese suitable for people with dairy allergies?
|
We advise that dairy allergy sufferers avoid our Cows Cheese range. Corleggy Goats Cheese may be suitable, as most people with dairy allergies dont have a problem with goats milk. |

What makes Farmhouse Cheese different to processed cheese?
|
Farmhouse Cheese is made from the milk of just one dairy herd, which graze in the same lush meadows. Corleggy Cheese is produced daily in small batches, straight after milking. Each batch of our Farmhouse cheese is highly individual, with lots of subtle flavours and the potential for maturity never reached by factory-produced cheeses. To mix milks from hundreds of herds, together with the over-sanitised processing, impacts the taste in a way that is detrimental to taste. |

How is Farmhouse Cheese best stored?
|
Corleggy and Drumlin are both hard natural cheeses, which do not like refrigeration very much. They are very happy at room temperature, not exceeding 18°celcius, such as a scullery or a cool room. If you dont have such facilities, the bottom section of your refrigerator will provide an ambient temperature. As with a bottle of wine, your cheeses should always be taken out of the fridge one hour before you plan to eat them. |

How long can the cheeses be stored?
|
Corleggy and Drumlin cheeses can be stored for many weeks, as described above. If they are unopened, they improve with age. However, once cut they should be eaten within 2 weeks. This is due to the loss of the protective skin which causes the cheese to dry. |

Are Corleggy and Drumlin cheeses suitable for cooking?
|

Are Corleggy and Drumlin cheeses suitable for freezing?
|
No. It is better to leave them uncut at room temperature. They will even improve. |

Is the rind of both cheeses edible?
|
Yes. In fact it is the most mature part of the cheeses, so some people would consider it the "best bit". If you find a trace of mould on the rind or even the cheese, it is nothing to worry about. This is just the natural maturing taking place. It is easy to brush it off with cold water under the tap. |
