Cáis Cairdiúl is the Irish for Friendly Cheese and this, in short, is what the Society is all about.
The beautiful northwest countries of Ireland could not be a better place to live- with one exception the easy availability of really good food. Traditional, organic, original, homemade, gourmet, slow food. Call it any of these names; it is impossible to source easily. We want to help.
Who are we?
Silke Cropp came to live in Belturbet in 1981, and being frustrated that she could not find the type of cheeses she wanted, decided to set about making her own. Now she has her own large herd of goats, and her cheeses named after her townland Corleggy have own many prizes including two gold and two silver medals at the International Cheese Competition, Dublin 2000. Corleggy cheeses are now available in the best restaurants and gourmet stores in Europe.
Cheesemonger Trevor Irvine made the decision to return to Ireland in 1996. In Carrick-on-Shannon, he owns Cheese etc. a specialist delicatessen which fulfils his ambition to provide a large diversity of fine foods, particularly cheeses and complementary wines.
Artisan cheesemaking does thrive on these island shores if you know where to find it. From the creamy taste of Cooleeney to the semi-soft Milleens from the distinct taste of Corleggys Drumlin to the strength of Gabriel, the list grows annually and stretches the length and breadth of the country.
Not everyone wants to travel.

The aims are simple
To increase the knowledge of cheeses in convivial company. A few times a year we shall arrange gatherings at enticing locations for you to enjoy good cheese, good wine, and good company. Only by tasting can you experience the vast differences in the variety of farmhouse cheeses. Beginning in Ireland we shall take you a taste sensory journey from Cavan to Cork, Tyrone to Tipperary, and from Donegal to Drogheda, to experience the unique flavour of their countryside for which expert cheesemakers strive. Neither shall we ignore the diversity of the worlds cheeses: Appenzeller, Banon, Taleggio, Rocquefort, Manchego, to name but a few.
To provide a one-stop centre of excellence for the purchase of Cheeses, (mostly Irish, but with occasional special suggestions from Europe), together with wines, chutneys and other items complimentary to our main aim.
