Goat’s cheese – healthiness as well as tastiness.

Many of us are becoming increasing conscious of what we consume. Thankfully not all that is tasty is contrary to the healthy diet.

You may already know that many people allergic to cow milk products, or who are lactose intolerant, can use goat milk products. The lactose or protein in the milk is what usually causes the allergic reaction. Goat milk has both lactose and protein, but its different make up doesn't give a reaction to most people.

Goat milk is recommended for babies because of its easy digestibility and non-allergenic properties. Goat milks natural buffering qualities make it beneficial for babies or people with ulcers or other stomach problems.

Of course we do not give any hormones to increase
milk production. Nor do we feed antibiotics to prevent sickness, only using them in rare cases tosave an animals life. Goats are unusually healthy animals and if one is ever sick, she is isolated and treated with the proper medications prescribed by the vet. We double the length of time we withhold the milk from use and then test the milk when the doe is well, before using it for human consumption. In fact, at Corleggy we test every batch of milk before using to make either yoghurt or cheese.

Goat milk has smaller fat particles which make it easier to digest. Often goat milk is referred to as naturally homogenised since hardly any cream rises to the top. Those that are concerned about the fat cholesterol content should be aware that we at Corleggy believe in producing cheese in its most natural form with the least amount of processing. Goat milk is already lower in fat and cholesterol.
